Spaghetti squash is a good source of vitamin C, vitamin B6, and manganese. It is a fair source of niacin, pantothenic acid, and potassium. I made a delicious dish yesterday using spaghetti squash with beans..Here is the recipe!
- 1 medium spaghetti squash
- 2 teaspoons olive oil
- 1/2 cup red onion, chopped
- 1 jalapeño chili, seeded, minced
- 1/2 cup red pepper, or green chopped
- 1 cup black beans, rinsed and drained well
- 1 tomatoe
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/3 cup cilantro, minced
- 1 tablespoon lime juice
- 1 teaspoon sea salt
Use a sharp knife to cut. |
I put a little bit of olive oil garlic and sprinkle with salt ,pepper |
Place squash face down in a baking dish. Bake at 400 degrees F for 35-40 minutes.
For the filling, heat oil in a large pan and sauté onion, jalapeño and red pepper for 2 minutes. Add beans, tomato, cumin and chili powder; saute 1 minute longer. |
When the squash is finished roasting, scoop the flesh from the shell. |
Add cooked squash, cilantro, lime juice and salt to pan; cook 1 minute until heated through. Fill squash halves with filling, mounding mixture in the center |
